CLEVER
It is a completely renewed ventilation system that allows reaching 250° in 25 minutes using only 1.5 kg of wood, effectively meeting energy-saving and efficiency needs. The fan, positioned on the rear wall of the oven, extracts the vapors produced by the food, eliminating all moisture from the cooking chamber. At the same time, the heat coming directly from the combustion chamber at the base of the cooking chamber follows a mandatory rotary path thanks to the force exerted by the fan. This pushes the heat from the back of the oven to the front, where it vents through small holes positioned at the front: this not only ensures perfectly even cooking but also prevents sudden heat escape when opening the oven, creating an air barrier.
